This gluten-free whipped cream treat is so simple to make β all you need is heavy whipping cream, lemon juice and powdered sugar. The vanilla extract is optional. With your electric mixer, you beat the ingredients until stiff peaks form. The most incredible part may be that this delicious recipe takes only about five minutes to make!
I served this low-sodium whipped cream as a topping for my lemon blueberry cheesecake muffins and it was to-die-for. You also can use it on top of cakes, cupcakes, pancakes, pies, waffles, berries or wherever you want to enjoy that refreshingly sweet flavor (it's great all on its own, too)!

- 3 teaspoons lemon juice

- For best results, use heavy whipping cream that's very cold. It also helps to put your mixing bowl and mixer's whisk attachment into the refrigerator to chill about 15 to 30 minutes before using them so they are cold as well.
- I used an electric mixer, but you could try to make it without one by using a cold wire whisk and beating the ingredients rapidly until peaks form.
- I like the added flavor of a teaspoon of vanilla extract, but that is optional.
- You can use some lemon slices as garnish, if desired.
- Store any leftovers in an airtight container in the refrigerator. You also can freeze it.
Here's how to make it:
- To the bowl of your electric mixer, add the heavy whipping cream, lemon juice and vanilla extract, if using.
- Beat on medium to high speed until mixture starts to thicken, about 1 minute.
- Add the powdered sugar to the bowl. Beat on medium to high speed until stiff peaks form, about 2 to 3 minutes.
- Serve over your favorite desserts, berries or on its own with a spoon. Top with lemon slices as a garnish, if desired.
